About Lake Powell:
Lake Powell is the second largest man-made lake in the United States & is the ultimate playground! Over two million people visit each year to view the iconic landscape of sandstone arches, canyons, & winding waterways. The crystal-clear waters are home to water sports like boating, kayaking, paddleboardng, & rafting. Instagrammable points of interest include Antelope Canyon, Rainbow Bridge, & Horseshoe Bend.
The Food & Beverage Director manages the day-to-day operations (both Front of House and Back of House) for Lake Powell Resorts & Marinas located near Page, Arizona. Will also provide overall strategic support for the entire F&B operations at Lake Powell. The Wahweap food and beverage operation consists of approximately $5 million in top line sales in a wide variety of outlets including: fine dining, bars, hotel room service, catering, grab and go, and Employee Dining Rooms. The role has administrative and functional direct supervision of up to 120 staff members at peak season including potentially 8-12 direct reports.

Job Responsibilities
- Establish and maintain systems and procedures for the ordering, receiving, storing, preparing and serving of food and related products, as well as menu planning and development.
- Manage all F&B operational (Front & Back) functions including budgets, forecasts, expenses and supplies. Assist in unit forecast and unit accounting.
- Expected work hours 50-60 hours/week during peak season and 30-40 hours during winter season.
- Ensures that requirements for appropriate sanitation and safety levels in respective areas are met and coordinates and supervises unit personnel regarding production, merchandising, quality and cost control.
- Conducts period inventory; performs other functions such as maintaining records to comply with ARAMARK, government and accrediting agency standards.
- Ensure that alcoholic beverages are served within the rules outlined by the Arizona Department of Liquor Licenses & Control.
- Ensure that all required employees are TIPS and Servsafe trained and certified and all Aramark liquor policies are adhered to.
- Responsible for daily interaction with the client and client's customers and/or employees. Ensure that all efforts are focused upon exceeding each and every guest?s expectation.
- Observe guest reactions and confer frequently with staff to determine guest satisfaction.
- Resolve guest concerns, including, but not limited to, mindshare comments and letters.
- Able to work flexible schedule including nights, weekends and holidays.
- The ability to identify defects in the preparation and service of food and implement improved quality control procedures as well as to communicate effectively with clients, client customers and support staff is required.
- Develop and implement hiring and training programs to ensure all positions are adequately staffed with trained personnel.
Qualifications
Ideal candidates will possess a bachelor's degree in Hospitality Management, Foods and Nutrition or other related fields, plus a minimum of three to five years of relevant experience or a combination of education and experience from which comparable knowledge and skills are acquired.
- Management experience required.
- Proficient computer skills including MS Word, MS Excel and MS Outlook. Point of sales program with Micros touch systems knowledge preferred.
- Excellent customer service skills.
- Abilities in marketing, merchandising and all areas of Front of House and Culinary are preferred.
- P&L accountability and/or contract-managed service experience is required.
- Ability to manage and maintain inventory/cost controls is required.
- Ability to deal effectively with customers and other Company personnel. Ability to speak effectively before groups of customers, guests or employees.
- Very good knowledge of relevant health and safety regulations and procedures. Ability to interpret and apply safety rules, operating, maintenance and procedure manuals.
- Must be knowledgeable of all aspects of restaurant, room service, bar and banquet operations. Knowledge of fine food, wine and spirits required.
- Superior organizational and time management skills required.
