Sommelier | Restaurant Operations Manager Job Responsibilities:

  • Collaborate with the General Manager (GM) on staffing decisions, including hiring, training, scheduling, and evaluations. All new hires and terminations require GM approval.
  • Develop and implement training plans for servers, server assistants, and bussers
  • Directly manage dining room service efficiency, organization, and policy adherence.
  • Manage daily Point of Sale (POS) updates and maintain restaurant inventory systems.

Sommelier | Restaurant Operations Manager Job Responsibilities:

  • Supervise staff for guest service, cleaning, and restaurant repairs.
  • Prioritize floor duties during service hours and communicate absence to co-managers or the team.
  • Curate and maintain the wine list, ensuring alignment with concept, seasonality, and profitability goals.
  • Manage wine inventory, including ordering, receiving, storage, and cost control to meet targeted beverage margins.
  • Build and maintain relationships with wine vendors, distributors, and suppliers to secure allocations and negotiate pricing.
  • Lead pre-shift tastings and ongoing wine education to elevate staff knowledge and guest experience.
  • Provide expert wine service, including tableside recommendations, pairings, decanting, and presentation.
